It’s summer time – it must be time for salads. A Waldorf Salad makes a great lunch for the hot summer months. It’s surprisingly filling on its own, or with a piece of bread or some crackers on the side. This recipe makes 2 servings so you have enough to share. It also keeps well in the fridge to eat again on the second day. And when someone at work asks you what you’re eating, they’ll be impressed when you answer Waldorf Salad, even if they assume you bought it premade somewhere. I like to imagine that I’m eating my salad at an elegant New York City restaurant, instead of at my desk in front of my computer. It gives me a little boost of confidence and determination before I face the second half of my work day.
Waldorf Salad is also a great meat free option for Fridays during Lent. Except that is feels more like a treat than a sacrifice.
Waldorf Salad
Ingredients
Salad:
- 1 apple chopped
- 1/2 cup seedless grapes halved
- 1/2 cup chopped celery
- 1/2 cup chopped walnuts
- 2 leaves large lettuce optional
Dressing:
- 3 tablespoons mayonnaise
- 1 tablespoon lemon juice
- salt and pepper to taste
Instructions
- Mix the mayo, lemon juice, salt and pepper into a dressing.
- In a small bowl, combine the dressing with the apple pieces, grapes, celery and walnuts until everything is well coated.
- Serve the salad in a lettuce leaf, or a bowl.
