I know, schnitzel is supposed to be served with potatoes, at least in Germany. But we have several other meals in this week’s plan that include potatoes, so I serve my schnitzel with noodles. Just try not to sing along. The kids hate any reference to the “Sound of Music”, so when they ask “What’s for dinner?”, I sing my response. That’s just the kind of mom I am. And the “Sound of Music” is my all time favorite movie. Spaetzle would be better than regular noodles but my local grocery store doesn’t carry them.
1 ½ lbs. thinly sliced boneless pork chops
¾ cup flour
1-2 eggs
1 ½ cup panko bread crumbs
½ cup olive oil
Salt to taste
Add olive oil too a large skillet and heat the pan on medium high heat. Dip each piece of pork first in the flour, then in the beaten egg, and finally in the panko bread crumbs. Fry in the hot olive oil until the breaking turns a light golden brown and the meat is cooked through. Salt lightly to taste.
Serve with parsley butter noodles and German cucumber salad on the side.
