I never ate asparagus as a child. My first taste was in college when we were served asparagus omelets. I was not a fan. But I like other roasted vegetables, so I thought I’d give these a try. They’re great! The tops get a little crunch, and the olive oil and salt add flavor. Tim always points out that asparagus makes your pee smell funny. Dinner table conversation with a family of boys, what can I say?
1 bunch fresh asparagus
Olive oil
Garlic salt
Preheat the oven to 400 degrees. Wash the asparagus, and cut or break off the tough ends. Pile the asparagus onto a baking pan, and drizzle with olive oil, letting it drip down onto the asparagus below. Spread the asparagus into a single layer, and salt to taste. Bake for 20-25 minutes until desired doneness.
