Roast Chicken (from the deli)
O.K., this isn’t really a recipe, but a meal idea. This is great for a night when we have a late practice and need to eat in a hurry. I keep the cooked chicken in the fridge for 1-3 days, then microwave in a covered casserole dish when I’m ready to serve it. We combine this with instant mashed potatoes (frozen) and chicken gravy from a package mix. A salad-in-a-bag can make this an almost instant meal.
