Breakfast burritos are a New Mexico specialty. They are especially popular at the Balloon Fiesta on those cold dark fall mornings. We traditionally eat them on Christmas morning, and for dinner throughout the year. When someone at work has something really big to celebrate, they bring in breakfast burritos from Golden Pride for everyone. They arrive individually wrapped in parchment paper with numbers handwritten on top. Number 9 is a popular combination, and the one I reach for every time. Although there are several slight variations here in New Mexico, this is how we make breakfast burritos at our house. Combining the meat, eggs and potatoes into one skillet makes serving faster for our big family. We’ve found that large thin tortillas work best for sealing up the ends and holding the filling inside, and for making a really big burrito sized for a teenage boy.
Breakfast Burritos
Ingredients
Burrito Filling
- 1 lb. turkey breakfast sausage casings removed
- 1 package frozen potatoes O’Brien 12 oz.
- 8 eggs
- 1/2 cup milk
Green Chile Sauce
- 3 small cans chopped green chiles or 1 container frozen green chile
- 1/2 cup chopped onions
- 1 teaspoon garlic salt
Other
- 8 oz. shredded cheddar cheese
- 6-8 flour tortillas
Instructions
- Start the green chile sauce cooking first. Mix the onions, garlic salt, and green chiles in a small saucepan, and bring the mixture to a boil. You can add a few drops of jalapeño sauce if you prefer more heat.
- Meanwhile in a large skillet, brown the breakfast sausage, breaking it apart like ground beef as it cooks.
- In a second skillet, cook the potatoes according to the package directions.
- Combine the eggs and milk. After the sausage is finished, remove it from the pan and scramble the eggs in that pan.
- When everything is cooked, combine eggs, sausage, potatoes in one pan and cover to keep warm.
- To build a burrito, start with a flour tortilla, and sprinkle a generous amount of shredded cheese down the center.
- Top with the sausage/potato/egg combo, then with a scoop of green chile sauce.
- Roll and fold into your favorite burrito shape, and enjoy.
