In the spring, when the garden store is full of plants and I’m sure this will finally be the year that I’ll really grow a real garden, I pick out a basil plant and a few tomato bushes. Even when I forget them later in the summer, those tomatoes and basil just keep growing. So what to do with all that basil…
How about Basil-Tomato-Mozzarella appetizers? I know, this isn’t really a recipe. But I’m adding them here just so I don’t forget them. I use my home-grown basil, but I usually buy grape tomatoes because I grow larger tomatoes for slicing. They make a great side dish to homemade pizza, or burgers, or even pasta salad. Or a great appetizer when the family can’t wait for dinner to be ready.
Basil Tomato Appetizers
Ingredients
- 12 small grape tomatoes
- 12 large basil leaves
- 12 small squares of mozzarella cheese cut from a block of cheese
- balsamic vinegar or balsamic vinaigrette salad dressing
- 12 toothpicks
Instructions
- For each skewer, start with a square of cheese on a toothpick.
- Push the toothpick through the tip of the basil leaf, then add the tomato.
- Wrap the leaf around the tomato and push the toothpick through the leaf again.
- Place all your completed toothpick skewers on a plate and top with balsamic vinegar or salad dressing.
- Eat it in one big bite – so you get to taste all the flavors together!
