Tim loves white gravy. It seems to be a Texas thing. I used to use a package mix, but making it from scratch is just as quick and almost as easy. In fact, this entire meal is really quick and easy, thanks in part to all the packaged products. Frozen mashed potatoes and frozen green beans, oh well, some nights are busy.
1 ½ lbs thinly sliced pork chops
½ cup flour
2 tablespoons olive oil
Salt and pepper to taste
Frozen mashed potatoes (1 ½ bags)
6 tablespoons butter
3/4 cup milk
1 package white gravy mix or use recipe below
Frozen steam-in-the-bag green beans
Start the frozen potatoes in the microwave, 1 bag at a time, since they take awhile. The 1/2 bag will need to be cooked in a bowl. Meanwhile, heat olive oil in a large skillet. Coat the pork chops in flour, add half of the pork chops to the skillet, and season with salt and pepper. Cook until the edges start to brown while the center still looks pink. Turn the pork chops over and cook until white all the way through. Remove the pork chops to a plate, and continue with the second batch of pork chops. Prepare the gravy mix according to package directions, and continue cooking the second 1/2 bag of potatoes and the green beans in the microwave. Combine the heated potatoes, the milk and the butter in a large bowl, stirring and mashing the potatoes until only a few lumps remain.
Serve the pork chops and potatoes topped with the gravy, and with the beans on the side.
White Gravy
1/4 cup butter
1/4 cup flour
2 1/2 cups milk
salt and pepper to taste
Melt butter in a small saucepan over medium high heat. Whisk in flour, and continue to cook for about 2 minutes. Whisk in milk and cook until thickened and bubbly. Add a generous amount of salt and pepper, tasting from time to time. None of the measurements are very precise, so add a bit more butter and flour, and a bit more milk, if you like lots of gravy.
