For 6 sandwiches
1 ½ lbs sliced roast beef from the deli
2 green pepper, sliced into strips
1 large onion, sliced
12 slices of provolone cheese
6 sub rolls
Butter
Slice open the sub rolls and butter them on the inside. Slice roast beef into strips. In a large skillet, cook onions and peppers in a little olive oil until they a starting to soften. In a separate skillet or large electric griddle, please the sub rolls butter side down and cook until warmed through. Returning to the first skillet, add strips of roast beef and continue cooking until meat is heated through and vegetables reach desired doneness. To assemble the sandwiches, place two slices of provolone cheese in each sub roll, then add hot filling on top of the cheese to melt the cheese.
If you’re only making 1 or 2 sandwiches, you can add the cheese to the top of the filling, open the sub roll over the top of the cheese, then use a spatula to lift the sandwich up and scoop the filling into it.
