This soup is both beautiful and tasty, and I’m not a big soup person. It comes together really fast on a cold night, and tastes great reheated for lunch the next day. The soup is very healthy, with spinach, squash, tomatoes and beans. In fact, it’s so healthy that we have to balance it out with a grilled cheese sandwich on the side. And you know the kids hate that.
Italian Sausage Soup
Ingredients
- 1 lb. Italian turkey sausage casings removed or Italian seasoned ground turkey
- 1 medium onion chopped
- 1-2 yellow squash cut into bite sized pieces
- 1 can white beans northern or white navy beans
- 1 can diced tomatoes
- 2 cans chicken broth 15 oz. each
- 2 teaspoons minced garlic
- 2 cups fresh baby spinach
- ½ cup shredded Romano or Parmesan cheese (not the stuff in the green bottle
Instructions
- Brown the turkey sausage as you would ground beef, breaking it apart as it cooks.
- Add onion and garlic and cook until softened.
- Add tomatoes, squash, beans and broth and cook until squash softens, 20-25 minutes.
- Stir in spinach just before serving, and cook until wilted.
- Top each bowl with a generous pinch of shredded Romano or Parmesan cheese.
