Summer time is salad time, and this pasta salad with cheese, salami and vegetables has everything it needs for a cool dinner on a hot night. It’s best eaten outside on a warm evening, maybe with a half of a grilled cheese sandwich on the side. Pasta salad for dinner means it’s really summer at last. Lately we’ve taken to eating by the pool, followed by either a lazy dip or a relaxing fire in the fire pit, depending on the weather. Of course a fire just isn’t fun without roasted marshmallows and s’mores, but eat your dinner first. Italian pasta salad, a dinner that leaves time for dessert.
Italian Pasta Salad
Ingredients
- 1/4 lb. sliced salami cut into bite sized pieces
- 8 oz. Mozzarella cheese cubed
- 1 cucumber peeled and cubed
- 1 medium tomato cubed
- 1 green pepper cubed
- 1/2 cup chopped onion
- 1 medium can sliced black olives
- 1/2 cup Italian salad dressing or to taste
Instructions
- Cool the noodles by tossing them in a colander with ice cubes.
- Combine all the ingredients in a large bowl, adding salad dressing gradually until everything is lightly coated.
- Serve chilled.
