I didn’t think I liked dove until Tim fixed this recipe for the family. We couldn’t get enough. I tried bragging to the Boy Scout dads about Tim’s amazing cooking, but they all cook dove this way. So this recipe is hardly original or unique, but it is really really tasty. The fact that we eat very little bacon just makes it all the more special. This year we ate dove poppers as part of our Super Bowl menu. We’re not big football fans so the Super Bowl at our house is all about the food and the commercials. We eat a lot of appetizers and chips, served in front of the TV of course, and call that dinner.
Grilled Jalapeno Dove Poppers
Ingredients
- 10-12 cleaned dove breasts
- 8 ounces cream cheese
- 1-2 jalapeno peppers
- 1 package bacon
- salt and pepper to taste
Instructions
- Remove the breasts from the bone, and divide each breast into 2 lobes, yielding 20-24 lobes.
- Sprinkle the dove lightly with salt and pepper.
- Slice the jalapeno peppers into rings so you have one for each dove breast, and remove the seeds.
- Cut the bacon slices in half.
- To assemble, fill each dove breast with a teaspoon or so of cream cheese and a jalapeno slice. Fold the dove over the filling, then wrap it in the bacon slice. Secure the assembled dove wrap with a toothpick.
- Grill over a medium high grill for 3-5 minutes, turn, and continue grilling for another 3-5 minutes until the bacon is crisp.
