With the global pandemic still raging on, we’re eating at home 7 days a week instead of the usual 6. This means every week I need to find an “extra” meal, and with the heat of the summer, I’ve been looking for things to grill. I’ve always liked turkey burgers, but I realize they are definitely not hamburgers. They require a little more seasoning and garnishing. But with these turkey burgers, much of the flavor is cooked right in with feta cheese and spinach. And we love feta at our house. We are also fans of Greek seasoning combinations, like Greek Pasta and Chicken Souvlaki. I knew these burgers would be a guaranteed hit. We topped them with Tzatziki Sauce, then ate the rest of the sauce as a dip with pita chips. Next time I think I’ll make a small Greek Salad too. We ate them out on the back patio and enjoyed a relaxed evening with the family before Thomas heads back to college. The Orange Julius’s made it extra special. We’ll definitely be making these again before the temperatures turn cool.
Here the recipe for the Tzatziki Sauce
Tzatziki Sauce
2 cups Greek yogurt
1 English cucumber
1 ½ tablespoons lemon juice
2 teaspoons minced garlic
1 teaspoon dried dill
½ teaspoon salt
¼ teaspoon pepper
Grate the cucumber using a cheese grater. There is no need to peel it. Allow the cucumber to drain for 20-30 minutes, or squeeze the moisture out using paper towels. Mix the yogurt, drained cucumber, and seasonings together, and let the sauce rest for the flavors to combine.
Greek Turkey Burgers
Ingredients
- 4 oz. crumbled feta cheese
- 3 cups chopped fresh spinach
- 3 green onions, chopped or 1/4 cup chopped onion
- 2 teaspoons minced garlic
- 2 teaspoons oregano
- 1 teaspoon garlic salt
- 1 teaspoon pepper
Instructions
- Preheat the grill to medium high heat.
- Mix all the ingredients EXCEPT the ground turkey in a medium to large mixing bowl.
- Add the ground turkey, and mix gently until the feta and spinach are well distributed.
- Form into about 9 patties, each slightly more than ¼ lb.
- Carefully transfer the patties to the grill, and cook for 4-5 minutes per side or until cooked through.
- Serve on a hamburger bun and top with Tzatziki Sauce, lettuce and tomato. Some sliced black olives would be great too.
