These are my emergency cookies, you know, for when someone announces at 9pm that they need to bring cookies to school tomorrow for a party. Or when someone gets home from work at 6 and reminds me that the cub scout den will be there at 7. Except this is the first I’ve heard of it. I can bake these up in 35 minutes, which is just about how long it would take me to drive to the grocery store and pick up some bakery cookies. I’d rather be home baking cookies than out in my car fighting traffic. But that’s just me. And all the ingredients are things I keep in my fridge or pantry anyway, so I’m ready for an emergency. Because as the cub scouts like to say, “Be Prepared”.
Easy Snickerdoodles
Ingredients
- 1/2 cup margarine or butter
- 1 1/2 cups flour
- 1 cup sugar
- 1 egg lightly beaten
- 1/2 teaspoon vanilla
- 1/4 teaspoon baking soda
- 1/4 teaspoon cream of tartar
To roll the cookies
- 2 tablespoons sugar
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 375 degrees.
- Mix ¾ cups of the flour, the sugar, baking soda and cream of tartar in a medium sized bowl. Use either soft margarine, or melt the butter.
- Add to the dry ingredients along with the vanilla and the beaten egg. Mix until well combined, either by hand or with an electric mixer.
- Add the remaining ¾ cup of flour and continue mixing until the flour in completely incorporated into the dough.
- You could chill the dough at this point which would make it easier to work with, but who has time for that? Not me. Form dough into 1 inch balls (maybe a little bigger) and roll in cinnamon sugar mixture. I can usually get 24 cookies from this recipe.
- Bake on an ungreased cookie sheet for 10-11 minutes, or until just starting to brown around the edges.
You can clean up while they bake, which is still better than driving to the grocery store.
