What to serve with schnitzel? How about German Cucumber Salad. Most versions contain only cucumbers and onions, but I like this version with tomatoes too. We didn’t actually eat this, or even see this, on our one day visit to Germany, so this salad may be totally American for all I know. But it is tasty, and it adds a little bit of vegetable to Germany night.
1 large cucumber, peeled
2 Roma tomatoes
¾ cup sliced onion
½ cup sour cream
1 tablespoon milk
1 tablespoon white vinegar
1 small squirt of Dijon mustard, about 1 teaspoon
1 teaspoon dried parsley
1 teaspoon dill
Salt and pepper to taste
Slice cucumber and tomatoes into thin disks, then toss vegetables together in a medium bowl. Mix remaining ingredients together to form a dressing, then add dressing to vegetables to coat. Let salad sit while you prepare the rest of the meal, or prepare it in the morning. Feel free to substitute plain yogurt for the sour cream. I use whichever I happen to have on hand.
