For years we ate packaged Spanish rice with every Mexican meal. I’m so tired of Spanish rice. Lately we’ve been eating Cilantro Lime Rice instead, inspired by Chipotle. I’ll probably get tired of this too if I don’t start mixing things up. This rice has a lot less salt than the packaged stuff. One of the women at work brought a similar rice to a potluck, and she added canned corn and more garlic. It was really delicious. If you want this to taste even more like the rice from Chipotle, just add more butter. But I’m still on the “saturated fat is bad” eating plan, so I try to substitute more olive oil in place of the butter.
Cilantro Lime Rice
Ingredients
- 3 cups uncooked rice white or brown
- 3 tablespoons lime juice
- 2 tablespoons butter
- 2 tablespoons chopped fresh cilantro or 1 teaspoon dried cilantro
- 1 teaspoon garlic salt to taste or to taste
Instructions
- Cook rice according to package directions.
- Add lime juice, butter, cilantro and garlic salt.
- Stir together and serve.
- You can add a bit of olive oil if the rice seems too dry.
