I’ve been making a meal we call “chicken, rice and veggies” since before we were married, more than 20 years ago. The rice part used to be a flavored rice mix, but after nearly 2 decades we finally tired of all the prepackaged flavors, plus I set a goal to eat more homemade foods and fewer highly processed foods. So the rice has been replaced with couscous that I season myself. The chicken still uses premade Italian seasoned breadcrumbs, but we’re definitely not tired of that! This method of cooking chicken is quick and easy and nearly foolproof. Plus, this meal reminds me of cooking in our first apartment, before we had any kids, when being married was still new and exciting and I never imagined the adventures the next 20 years would bring. I even remember cutting up the chicken for the boys when they were too small to cut their own food. That’s a lot of memories tied to a little piece of chicken. I hope my kids cook this for themselves someday and that it reminds them of family meals with all their brothers.
Chicken with Italian Breadcrumbs
