My Minnesota mom made Chicken and Wild Rice Soup for us the last time she visited, and the boys immediately asked me to get the recipe and make it again. Her original recipe called for sautéing all the vegetables first, and using cooked chicken and cream. As soon as I read it, I knew I’d be trying to skip some steps and speed things up. We just had some hot Chicken and Wild Rice Soup this week before rushing off to the high school Jazz Band concert, and it tasted great! We’re still enjoying the leftovers. It was worth the effort it took to find wild rice here in New Mexico.
I know I’ve bought wild rice at my regular grocery store before, but it seems to have gotten squeezed out. My local Walmart didn’t have any wild rice either, so I decided to try ordering some. A 1 lb. bag of authentic Minnesota Wild Rice on Amazon was about $12, but a 1 lb. bag sold at Walmart online for only $5. However, I needed to spend $35 at Walmart for free shipping. So in order to buy my little bag of wild rice, I also bought lots of Ziploc bags and aluminum foil. Now I just wish I’d purchased a bigger bag since the soup was such a hit. I wonder what I’ll find to buy to get my cart up to free shipping next time?
Chicken and Wild Rice Soup
Ingredients
- 1 1/2 lbs. chicken
- 1 cup wild rice
- 7-8 slices of cooked bacon optional
- 3 stalks of celery chopped
- 1/2 cup chopped onion
- 1 cup chopped carrot
- 8 oz. sliced mushrooms optional
- 2 teaspoons minced garlic
- 1 teaspoon poultry seasoning
- 2 cans chicken broth about 30 oz. total
- 1 can cream of chicken soup
- 1 cans cream of mushroom soup
- 14 oz. can evaporated milk or milk
Instructions
- Hopefully you chopped the vegetables and cooked the bacon the night before, and chopped the bacon into small pieces.
- In the morning you can add the rice, chopped vegetables, garlic, cooked bacon, and canned soups to the slow cooker.
- Top with the boneless skinless chicken or your choice.
- Cook on low for 8 hours or more, whenever you get home from work is fine.
- Use two forks to shred the chicken, then stir in the evaporated milk or cream before serving.
- Top each bowl with freshly ground pepper and salt to taste.
