I have failed at package brownie mixes more times than I can count. At one point, I was trying to make brownies every week, baking them longer and longer every time. I never got them to bake in the center. I live at 5900 ft. elevation, so maybe that was the problem. Anyway, since then I’ve been on a quest to find an easy brownie recipe that works at high elevation, and makes a fudgy rather than a cake like brownie. This recipe is the winner. It has very few ingredients, and bakes up perfectly. The original has a 5 star rating with over 1200 reviews. The author suggests stirring in extras, but we like our brownies plain. Thomas’s review was “Don’t change anything, but make more.”
Easy Brownies
Ingredients
- 1/2 cup melted butter
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 2 eggs
- 2 teaspoons vanilla
- 1/2 cup flour
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350 degrees.
- Mix together the melted butter and cocoa powder.
- Add in the sugar and stir to combine.
- Add eggs, 1 at a time, and stir until well incorporated.
- Add in the vanilla, flour and salt and stir until the flour is fully incorporated.
- Pour into a well greased 8” x 8” pan, and bake for 25 minutes.
- I used Pyrex baking dish, and the 25 minute baking time was perfect, but it may need to be adjusted for a metal baking pan.
Hmmm. The original recipe says it makes 16 servings. We’re lucky to get 9. These are amazing served warm with a scoop of vanilla ice cream on top.
