Broccoli is extra healthy, but sometimes it needs a little pepping up. This is a quick, classic salad that combines broccoli, bacon and mayo. How can you go wrong? And it saves well so it works great for lunch the next day. I cook the bacon, in the oven of course, earlier in the week so I have cooked bacon all ready to go when I assemble this salad. The key is to hide a little bacon right away before the boys inhale it all so I have some left for the salad.
Broccoli Salad
Ingredients
- 4 cups broccoli florets
- 3-4 slices of cooked bacon chopped
- 1/4 cup chopped walnuts
- 1/4 cup raisins
- 1/4 cup chopped onion optional
- 3/4 cup low fat mayo
- 2 tablespoons vinegar
- 1 tablespoon sugar
Instructions
- Combine broccoli, bacon, walnut, raisins and onion in a large bowl.
- Mix together mayo, vinegar and sugar to form a dressing.
- Add dressing to the other ingredients and stir until everything is well coated. This is best if you give it time to rest in the fridge, but it's fine to eat it right away too.
