This has become Zach’s favorite lunch since the stay-at-home order began. He has a lot more free time, but still doesn’t want to spend all of it cooking. Thomas introduced us to the creamy pesto, which is great served on hot pasta. But for this sandwich, Zach uses it as a spread. His brothers have been eating it this way too, so now Zach has started hiding some of the bagels so he can eat them later in the week. We are eating A LOT of food with everyone at home. It may look like I’m stockpiling food every time I go to the grocery store, but I actually need a lot to feed our large family for a week, especially with 3 teenage boys plus their older brother. I try to cook enough so we can all have leftovers for lunch, but that rarely works out, which is why Zach needs a lunch sandwich.
So, back to the bagel sandwiches. They are really good, and quick and easy to make. And they work well as a breakfast or lunch, or whatever meal teenagers eat when they sleep in forever. We’ve been using a creamy pesto sauce, but regular pesto would work too. The one we like is made by Barilla, and they call it Classic Genovese.
Bagel Pesto Sandwich
Ingredients
- 1 plain bagel
- 1 egg
- 1 slice cheddar or American cheese
- 2 tablespoons creamy pesto sauce
- 2 slices thin sliced lunchmeat ham, pastrami, or your choice
- salt and pepper to taste
Instructions
- Slice the bagel in half. Lightly toast it in a toaster or toaster oven.
- In a small nonstick frying pan, cook the egg over medium high heat, turning once. Season with salt and pepper.
- Spread pesto on the toasted bagel. Top one half of the bagel with the egg and cheese slice.
- Heat the lunchmeat in the nonstick fry pan, then add it to the bagel on top of the cheese.
- Finish the sandwich by topping it with the other bagel half.
