Everyone loves apple pie, but sometimes a little change is nice. And fruit crisp of any type is super easy and makes everyone happy. And it bakes a lot quicker than a pie. I use my handy apple peeler corer slicer to get the apples peeled, cored and sliced. It’s a remarkable simple tool, and should really be part of everyone’s Thanksgiving cooking tool collection. This apple crisp recipe is just peeled sliced apples, a little sugar, cinnamon and flour, and a crunchy topping. Bake it in the oven for a while until the apples get soft. Then remind the teenagers to leave some for the rest of us.
Like with pie, I like to use several different types of apples. Grandma Gunda always insisted. Of course, in Minnesota we used apples from the tree for pie, and many of them were a little imperfect. Now I don’t have access to an apple tree, so I just buy apples from the grocery store. I always choose 2 Granny Smith, and then whatever is on sale. About 6 medium sized apples make about 6 cups of peeled slices apples, but you could throw in an extra apple if you have one around. I bake this in an 8 x 8 inch square glass baking dish. You could use whatever you happen to have just so long as the filling fits. And try to leave a little space at the top to the apples don’t boil over.

Ingredients
Filling
- 6 cups apples peeled, cored and sliced
- 1/2 cup sugar
- 1 tablespoon flour
- 1 teaspoon cinnamon
Topping
- 2/3 cup rolled oats oatmeal
- 2/3 cup brown sugar
- 1/3 cup flour
- 6 tablespoons butter melted
Instructions
- Preheat your oven to 350 degrees.
- In a large bowl, gently mix the sliced apples with the sugar, flour, and cinnamon.
- Place the apple mixture into an 8x8 inch glass baking dish or similar casserole dish.
- Melt the butter in the microwave, using a large measuring cup or small bowl.
- Add the oats, brown sugar and flour and mix until well combined.
- Distribute the topping mixture over the apples.
- Bake at 350 degrees for 35 minutes, or until the apples are bubbling and the topping is toasted and golden.
- Serve with vanilla ice cream.
