New Mexicans firmly believe that everything is better with green chile, and pizza is no exception. This pizza recipe is adapted from Amore Neapolitan Pizza, in Albuquerque, NM. Amore’s version is meatless, but I’ve added a little crumbled Italian sausage in my version. With or without meat, the New Mexican Zia Pizza is pretty fantastic. Choose the heat level of your green chiles to make it as hot or mild as you want. Green Chile Salsa is an easy pizza topping option for this pizza.
It’s hard to brown just a little sausage for just one pizza, so I brown a pound of sausage and freeze what I don’t use. The next time you’re ready for pizza, just thaw out a bit of that cooked sausage and off you go. Or skip the sausage if you prefer a meatless pizza.
The white sauce recipe is enough for 1-2 small 12 inch pizzas. It’s about the smallest batch I could make. You could use alfredo sauce from the jar instead of white sauce, but it would be a little runnier and you’d be left with a partially used jar of alfredo sauce. This white sauce is easy enough to throw together using ingredients you probably already have. Double it or even triple it if you’re making more Zia pizzas.
You’ll need to start with a good pizza dough. I know some pizza places will sell you a ball of dough, but it’s really not hard to make your own. It just requires a little planning ahead.
The other toppings of a Zia pizza are pretty straightforward, just corn, green chile, and mozzarella cheese. Add a little variety to your homemade pizza repertoire, and give the Zia pizza a try.


New Mexican Zia Pizza
Ingredients
White Sauce:
- 1 tablespoon butter
- 1 tablespoon flour
- ½ cup + 1 tablespoon milk
- 2-3 tablespoons parmesan cheese
- 1 teaspoon minced garlic
- Salt and pepper to taste
Toppings:
- Italian sausage
- ¼ cup frozen corn kernels
- Green chile or green chile salsa
- Mozzarella cheese
Instructions
- Prepare your pizza dough, starting the day before or the morning of your pizza bake, if possible.
- With your dough resting on the counter at room temperature, start making the white sauce.
- Melt the butter in a small saucepan. Add the flour and stir to incorporate. Slowly add the milk and bring to a boil to thicken. Add the garlic and parmesan cheese and stir until the cheese melts. Taste and add salt and pepper as needed.
- Remove the sausage from the casing and brown, or make homemade Italian Turkey Sausage. You’ll have extra, freeze if for another day.
- Heat the frozen corn kernels in a microwave.
- To build the pizza, stretch the dough into a 12-14 inch circle. Spread with white sauce, then top with green chile, corn, and sausage. Sprinkle a small amount of freshly grated mozzarella cheese on top. Bake as desired (see my Pizza Dough recipe for times and temperatures).
