I’m addicted to overnight oatmeal. My version is simple and uses regular dairy products. Tim calls it my “morning gruel”, but it’s full of nutrition and perfectly satisfying after my morning run. I mix it up every night in a small thermos jar, and store it in the fridge overnight. The typical overnight oats recipes show the oats and other ingredients in distinct layers in a glass jar. Pretty pictures – but I’m planning on eating my oats. I was inspired by the Byggryn that I picked up at the grocery co-op in Bergen, Norway. It tasted like a lightly sweetened yogurt with cereal and fruit mixed in, and it made a fantastic and quick breakfast. Apparently byggryn is Norwegian for barley. However, we have more oatmeal in the US than barley, so I settled on overnight oats instead.
Lately, I’ve discovered unsweetened soy milk. It includes some fat, but not the bad saturated fat we all try to avoid. I’ve been using it in place of skim milk for a thicker and richer feel. I also no longer measure the ingredients – I just put some oatmeal, some yogurt, and some soy milk into a container until it’s mostly full, leaving enough room for fruit. It really is a complete breakfast, and easy to eat anywhere.
Christmas Alternative
- ½ cup lowfat eggnog
- ½ cup old-fashioned rolled oats (not quick cooking)
- ½ cup vanilla yogurt
- optional – whole fresh cranberries
Chocolate Hot Oatmeal
- ½ cup quick cooking oatmeal
- 1 cup water
- 1 packet instant hot chocolate mix
Add all ingredients to a 2 cup sized bowl. Microwave for 1 ½ to 2 minutes. Stir until chocolate is evenly distributed.
Overnight Oatmeal
Ingredients
- ~ 1/2 cup old-fashioned rolled oats not quick cooking
- ~ 1/2 cup milk soy milk adds richness
- ~1/2 cup vanilla yogurt Greek yogurt works well
- 1/4 cup frozen berries or fresh fruit
Instructions
- Start with a container with a lid, with a capacity of about 2 cups.
- Add the oatmeal, yogurt and milk. Stir to combine
- Add fruit on top, fresh or frozen.
- Put the lid on the container and store in the refrigerator overnight.
- Mix the fruit into the oatmeal blend before eating.
