Waffles are Zach’s specialty, along with pancakes. He started out using pancake mix, but after that ran out he pulled out our trusty old Better Homes and Gardens cookbook and made waffles from scratch. To be fair, Tim has also been making waffles from scratch for many years, so Zach was just following Dad’s example. But Zach’s waffles are better. Tim, trying to add a little nutrition to an otherwise perfect breakfast, always stirs wheat germ into the batter. He has also tried ripe bananas, or whatever other fruit he finds. Zach has been known to add chocolate chips, which are clearly tastier than wheat germ. Waffles can be topped with just about anything. I like jam myself, on hot or cold waffles, any time of the day.
Waffles from Scratch
Ingredients
- 1 3/4 cups all purpose flour
- 1 tablespoon baking powder
- 1/4 tablespoon salt
- 1 3/4 cups milk
- 1/2 cup vegetable oil
- 2 eggs lightly beaten
Instructions
- Spray both surfaces of your waffle iron, and preheat according to manufacturer’s directions.
- Combine flour, baking powder and salt in a medium sized bowl.
- Add milk, oil and eggs and stir until combined but still slightly lumpy.
- Slightly underfill your preheated waffle grill, and close the lid. The waffle will expand as it cooks and fill the rest of the space.
- Cook until the waffle is light golden brown, or until your waffle iron indicates the waffle is done.
- To serve, top with butter, syrup, jam, fresh fruit, whipped topping, honey, Nutella, yogurt, or whatever else you like.
